The BEST Chocolate Chip Cookies

For my first blog post, I wanted to share something with you all that I hold near and dear to my heart… CHOCOLATE CHIP COOKIES! One thing you will all quickly learn about me is that I am a Cookie Monster and not ashamed about it. I love baking them, decorating them, eating (all of) them. So, if you have been searching for the best chocolate chip cookie recipe in the entire universe, you have just found it. These cookies are perfectly perfect in every way and I guarantee you will agree. Don’t believe me? Try them out for yourself!

I have been spending 26 years of my life, AKA my whole life trying to create the perfect chocolate chip cookie and I am 99% sure I have finally figured it out. These cookies are easy to make like any other chocolate chip cookie recipe you will come across, but these cookies have a secret ingredient. Drum roll please… cornstarch!

I use mini chocolate chips when I make these cookies, but really just use whatever you prefer! It is the dough that makes these cookies so special.

A fun fact about me: I got this Kitchen Aid mixer from The Ellen Show for 12 Days of Giveaways. I am OBSESSED with Ellen and I am sure this won’t be the last time I talk about her.

If you are anything like me, you have already tasted the dough more than once by this point. If you are not, don't judge, I CAN NOT CONTROL MYSELF!

Is your mouth watering yet?

If you are still reading/scrolling, I know I have you hooked! Now get to baking fellow Cookie Monsters!

*Roughly makes about 3 dozen cookies. Try not to eat them all!

Ingredients:

  • 3/4 cup unsalted butter (room temp!)

  • 3/4 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 egg

  • 2 tsp. vanilla extract

  • 2 cups all purpose flour

  • 2 tsp. cornstarch

  • 1 tsp. baking soda

  • 1/2 tsp. salt

  • 1 cup mini chocolate chips

Directions:

  1. Using a stand mixer (or stirring by hand), mix together butter and both sugars until creamy. Then blend in egg and vanilla.

  2. Mix in cornstarch, baking soda, and salt. Add flour in 1/2 cup at a time until dough mixture starts to form (YAASS).

  3. Gently fold in chocolate chips.

  4. Put dough into the refrigerator for roughly a half hour. This step is not necessary, but I find the cooler the dough, the less the cookies spread and who likes a flat cookie?!

  5. Preheat oven to 350°.

  6. Using a tablespoon, scoop out dough and roll into perfect little balls of heaven.

  7. Bake for 8 minutes, not any longer than 9! This step is important, the cookies should barely have a golden browned edge. Let cool on the sheet for about 5 minutes, then transfer to cooling rack. Repeat until all the dough is gone and all of the yummy cookies are made.

Let me know what you guys think and please share if any of you had enough will power to eat just one! You guys aren’t human…(please give me your strength).
