Chicken Lettuce Wraps
If I had to pick a celebrity girl crush, it would all the way 100% be Chrissy Teigen (and Blake Lively). However, only one of them has a cookbook and that would be Chrissy and oh my gosh is it amazing. I would recommend everyone getting it and make all the mouthwatering dishes she has in there, link to her cookbook here. These lettuce wraps are taken from her cookbook, but tweaked a bit. She adds some ingredients to these that I am not overly fond of, like mushrooms and water chestnuts. But, anyway these are so yummy and perfect hors d'oeuvres for any party or to make for a light dinner.
Using butter lettuce for this recipe is probably best because the butter lettuce leaves are like natural little bowls, but of course when I wanted to make these wraps my local grocery store was out. So, I improvised with big pieces of romaine and made lettuce boats.

Make the sauce in a separate bowl. This sauce definitely has some spice to it, so when I served it at my last get together, I let people drizzle it onto their wrap on their own.
This was actually my first time cooking with ground chicken and to my surprise, it was not bad at all!
These little babies can be a bit messy, but they are so worth it.
Depending on how much stuffing you put into your wraps will result in how many wraps you are able to make. I stuffed mine pretty full and it made about 10 different "boats".
Ingredients for the Sauce:
3 Tbs. chili sauce
2 Tbs. hoisin sauce
1 tsp. sugar
3 Tbs. soy sauce
2 - 3 Tbs. Sriracha (depending on your spice tolerance)
2 Tbs. vegetable oil
1 tsp. sesame oil
1 1/2 Tbs. rice vinegar
2 Tbs. minced garlic
2 tsp. minced ginger
Ingredients for the Filling:
1 pound ground chicken
Tbs. vegetable oil
5 green onions (thinly sliced)
2 Tbs. minced garlic
1 Tbs. minced ginger
1 small bell pepper (red, yellow, or orange - finely chopped)
Some kind of lettuce. Preferably Butter Lettuce, but any type of lettuce that you could wrap the filling into, works fine.
Directions:
Mix all of the sauce ingredients into a bowl and set aside.
For the filling, mix 3 Tbs. of the sauce and the ground chicken together in a bowl.
Heat oil in a frying pan over medium-high heat and then add the garlic and bell peppers. Once fragrant, add the meat and ginger. While cooking, break up the meat until browned.
Remove from heat.
Add the filling to your lettuce bowls and top with green onions and more sauce. Optional: Sprinkle some sesame seeds on top.
