Truffle Aioli
In case you all didn't know, aioli is basically a fancied up mayonnaise. However, if you know anyone like my fiancé, who claims he hates mayonnaise, do not tell them that!! Because he LOVES this recipe! I mean it isn't really lying when he asks what this is and I do not respond with the word mayonnaise, right? Anyway, I just discovered truffle oil by eating truffle fries at a restaurant in Chicago and oh my gosh I am in love! I went out and bought truffle oil the next day and made this aioli.
I was inspired by the fries that I had in Chicago, so I paired the Truffle Aioli with my Rosemary Parmesan French Fries.
$15 for that little bottle of truffle oil made me want to cringe while buying it, but truffle oil is so potent that you do not need to use a lot of it. Therefore, it lasts for quite awhile. There is also a black truffle oil, which I hear is even more potent, so I stuck with white truffle oil to not overpower the aioli with the tasty truffle taste.
This recipes seriously could not be any easier. You just mix all of the ingredients together in a single bowl!
Ingredients:
1 cup mayonnaise
1 Tbs. white truffle oil
2 cloves garlic - minced
1 tsp. lemon juice
1 tsp. salt
1/2 tsp. pepper
Directions:
Mix all ingredients together in a bowl and refrigerate for at least an hour before serving. Enjoy!
