Lemon Honey Chicken
I absolutely love cooking with lemon! Not only does it give the dish more flavor with it's distinct, refreshing taste, but it makes the dish look so much prettier, doesn't it?! Creating dishes that look like this is what makes me think I'm basically a professional chef.
This Lemon Honey Chicken is so easy to make and only uses ONE pan! The only thing better than an easy dinner is an easy clean up. I already cook a lot, but I would cook a lot more if I had a clean up crew right behind me... #goals.

Those lemons are not just for show, mush them together with your chicken to get even more flavor!
I just made plain jasmine rice and poured the extra juices from the chicken pan on top, mm mm mmmm! And don't forget your veggies! My parmesan asparagus pairs very well with this chicken.
*Serves 2-3
Ingredients:
2 chicken breasts
1 Tbs. olive oil
3 Tbs. lemon juice
1 Tbs. soy sauce
3 Tbs. honey
1 Tbs. garlic (minced)
1 tsp. parsley
1 tsp. oregano
1 tsp. salt
1/2 tsp. pepper
zest of 1 lemon
Directions:
Preheat oven to 400°.
Spread olive oil on baking pan.
Mix all ingredients in a small bowl or mug and stir until well combined.
Butterfly chicken and place on oiled pan.
Pour the ingredients evenly over the chicken.
Top with however many lemon slices you'd like.
Bake for about 35 minutes.
