Slow Cooker Taco Chicken
This taco chicken is SO good! It comes out so tender from the crock pot and is so easy to shred. Cooking in the crock pot is one of my favorite things to do. If I could cook everything in there, I probably would. It is so easy! And this taco chicken is no exception, just throw everything in there and let the slow cooker do it's magic!
This recipe is perfect for Taco Tuesday or for Cinco de Mayo coming up on Friday. I love making a "build yourself" bar; whether it be drinks, sandwiches, tacos, or whatever else! I love seeing what people put together on their own.
It may look like a lot, but all of these ingredients go into one bowl to be mixed up and then poured over the chicken, that's it!
These two chicken breasts were big enough to feed 4-5 people and the amount of marinade I made was more than enough. So, if you feel like you need more chicken, another breast would be fine to add to this amount of marinade.
When there is about a half hour left of cook time, take two forks and shred up the chicken. It should be so tender, it will just fall apart.
Add the chicken to the tacos and build them however you like!

Ingredients:
2-3 chicken breasts
1/3 cup olive oil
Juice & zest of 1 lime
1 Tbs. brown sugar
1 tsp. cumin
2 tsp. chili powder
1 tsp. garlic powder
2 tsp. salt
1 tsp. pepper
1 tsp. paprika
1/4 tsp. Italian seasoning
1/4 tsp. cayenne pepper
Directions:
Whisk all ingredients together.
Spray crockpot with cooking spray and turn on to the 'Low' setting.
Put chicken in crockpot and pour marinade over, coat generously.
Cook on low for 4-5 hours. During the last 30 minutes of cooking, take two forks and shred chicken.
