Tomato Soup with Tortellini
Even though the weather is getting warmer, I still have soup cravings. My fiancé and I go CRAZY for this soup. It is so easy to make, but so full of flavor...we may or may not lick our bowls clean.
Growing up, my mom always made homemade soup, which is probably why I am not a fan of canned soup. Her chicken noodle soup is THE BOMB and I promise I will share that with you all soon. But, for now, I am sharing my Tomato Soup with Tortellini. This recipe does use a couple cans of tomato soup, so it is not completely homemade, but by combining it with the other ingredients it tastes SO much better than plain old canned soup.
I love tortellini. I am Italian, so if I am being completely honest, I love all pasta. Tortellini though is filled with cheese and tastes amazing in this tomato soup.
Cook your tortellini according to the package's instructions.
In a separate pot, sauté garlic in olive oil until golden brown, then add tomato soup, half & half, chicken broth, sun-dried tomatoes, and the spices. Mix all together and cook on low.
Once tortellini is finished, add it to the soup and continue to cook on medium.
Once it begins to slightly boil, turn off heat and serve. I like to load on the parmesan cheese on top...obviously.
Optional: Serve with garlic bread. It tastes AMAZING dipped into the soup.
**Serves: 4-6
Ingredients:
3 cloves garlic (minced)
2 Tbs. olive oil
2 cans of tomato soup
1/4 cup sun-dried tomatoes
2 cups half & half
2 cups chicken broth
2 tsp. onion powder
1 1/2 Tbs. Italian seasoning
1 tsp. salt
1/2 tsp. pepper
1 package cheese filled tortellini
parmesan cheese
Directions:
If you are using bullion cubes like I normally do, make 2 cups of chicken broth (2 bouillon cubes, 2 cups water). Set aside.
In medium saucepan, cook tortellini according to package instructions.
In large pot, sauté garlic in olive oil.
Once golden brown, add tomato soup, half & half, chicken broth, and spices.
Simmer on low and occasionally stir.
Once tortellini is cooked, add to soup.
Continue to cook on low - medium until it is lightly boiling. Turn off heat and serve.
Sprinkle parmesan cheese on top. Enjoy!
